Jervis Bay, NSW
In a nostalgic pocket of the NSW South Coast – 300 metres from the pristine waters of Jervis Bay – Oyster Catcher Huskisson is the epitome of the childhood beach holidays you wish you had.
In the sleepy town of Huskisson lies Oyster Catcher Huskisson, a meticulously crafted three-bedroom holiday house. Sleeping up to eight guests, this charming retreat is nestled along the shores of Jervis Bay, just a scenic two-and-a-half hours’ drive from Sydney or Canberra.
In a nostalgic pocket of the NSW South Coast – 300 metres from the pristine waters of Jervis Bay – Oyster Catcher Huskisson is the epitome of the childhood beach holidays you wish you had. Sunny days. Melting ice-cream. The smell of barbecues as you pad back to your holiday home from the beach. It’s kerb-free streets and friendly neighbours. Pouring a drink as your favourite tunes waft out the bifold doors onto the deck. The kids playing in the native gardens (they haven’t asked for screen time since you arrived). Time slows down; work is forgotten.
“Oyster Catcher Huskisson is not just a place; it's a personal journey. It's the culmination of a life spent travelling, a dream we share with our guests. One of our favourite descriptions is that the home is a beach shack that an architect went crazy on – high ceilings, thick walls for mass, louvres to allow the sea breeze in and a thermal chimney to pull the warm summer air out. It's an authentic holiday home, our special place to grow as a family, share with friends and open to special guests.”
How have you incorporated some sustainable practices into the home?
“We don’t claim perfection. We aim to make our guests' decisions more thoughtful. We are on a journey toward sustainability, and we are proud to share with our wonderful guests that they can be sustainable, luxurious, and accessible.
We have the basics: solar, EV charging, batteries, water collection and use, no single-use plastic, compost, and a growing and ever-changing herb garden.
It’s a long journey, every time we stay, we leave Oyster Catcher, Huskisson, and ourselves a little better.
If our guests leave with a sense of joy and one reason to change their lives to be more thoughtful about our planet, then it is a holiday well spent.”
“You get a special feeling when you arrive; its authenticity gives you a warm embrace, instantly your mind is at ease, settle in and holiday at your own pace. The garden is tranquil, the air fresh, and if you stop and listen, you hear nothing. Kerb-free streets, kookaburras, walking barefoot, and car-free streets bring back memories of childhood holidays.”
What features will make guests never want to leave?
“The front deck is hidden behind wonderful gardens in the quietest part of Husky, where even in peak summer, hardly ever a car passes. Run to the beach, come back, and repeat.
It’s the peace and quiet, the luxurious linen, the space, the garden—the complete antithesis of our city life.”
How do you spend your ideal weekend at Oyster Catcher?
“You are 5 good shucks away from becoming a confident Oyster Shucker. So, the first stop is always the shellfish market for Oysters, fresh then back to the deck for wine and a discussion on what to do. This will inevitably lead to a walk to Moona Moona Creek for a swim. BBQ back on the deck for a BBQ.
Mornings are slow, I do love a quick walk and swim before anyone else wakes up, hopefully see dolphins along the shore.
We have coffee and croissants from Kraken on the (you guessed it, deck!).
Then, the only time we will hop in the car is to Blenheim and maybe Murray's Beach for the morning. Once home, walk into town and to the brewery for lunch and drinks, so walk back and maybe a swim or two as we make our way back down the walk home along the bay.
Firepit in the backyard, more laughing and conversations.
Morning coffee at home, then breakfast at one of the wonderful cafes as we head off.”
How does Oyster Catcher encourage guests to go slowly?
“You get a special feeling when you arrive; its authenticity gives you a warm embrace, instantly your mind is at ease, settle in and holiday at your own pace. The garden is tranquil, the air fresh, and if you stop and listen, you hear nothing. Kerb-free streets, kookaburras, walking barefoot, and car-free streets bring back memories of childhood holidays.
Oyster Catcher is luxurious but not pretentious; it has been designed as our ideal holiday destination where everyone is welcome, with space to be alone or come together as a group.
When it is sadly time to leave, it's never goodbye, but always see you soon.”
